Pancakes
Ingredients for the batter:
225 g flour
30 g sugar
5 g salt
300 ml full-fat or half-fat milk
1 egg
10 g baking powder or baking soda
45 g melted butter
Whisk together the milk and egg, then
whisk in the melted butter. Add the other ingredients. Beat until you have a
smooth batter. Any lumps will soon disappear with a little mixing.
Heat a non-stick frying
pan over a medium heat and add a knob of butter. When it's melted, add a ladle
of batter. It should be thick. When the top of the pancake begins to bubble,
turn it over and cook until both sides are golden brown. The pancake should
look thick and fluffy.
This recipe will make about 8-10 pancakes.
Serve with lashings of maple syrup,
butter, nutella or raspberry jam.
They taste best fresh out the
pan.
